It’s been a great year having the beautiful N8 in my pocket. This device although over a year old, is still considered the world’s best camera phone, if you want to read more about those views go here or here or here or here or just use Google.
Instead of trying to give an expert opinion on something I’m not an expert on I thought I would let the photo’s speak for themselves.

What a great year 2011 was I’m super excited about 2012, but first let me recap some of the goals I set myself last year.
Blog More
I wanted to try and blog once a week, but only managed to average one post every 2 weeks which I think is still pretty good. I also successfully started blogging more about food.
Play Sport/Get Fit
I managed to get fit this year, through playing football, cricket and surfing and I also completed a 14km run for charity
I’m probably going to try for a half marathon this year if the doctor allows it.
Make a lego stop motion video
Sadly I didn’t get around to doing this, but the hope is that I can still do it one day.

I didn’t manage to do this either, which weighs very heavily on my heart. I did however still visit an ancient city – ROME
Starting Meditating again
I haven’t found the right class for this yet, but have done some big searching and even went to Yoga, which I don’t believe is for me, well not Bikrim Yoga anyway.
Do something amazing for a stranger
DONE, I help a lady pay for her shopping when her bank cards weren’t working. I couldn’t stand there and not let her get ice cream for her kids
Create a bucket list
Start this was fun, I’ll keep it private for now, but it’s going to be a work in progress probably for the rest of my life
Learn to snowboard
DONE and hurt myself and loved it, tick.

Secret Project
Started looking into this but haven’t been able to get it off the ground. I have a new project for 2012, not a secret and I’ll share it with you all within the next week or so.

I came across this recipe a few years ago and it’s changed as time has passed, but one thing that hasn’t changed is that it’s awesome everytime.
This dish is great for parties, a pre-BBQ snack or even a starter.

Mustard & Balsamic Chicken really?
Chicken fillets
Fresh Rosemary (keep the sprigs)
Garlic Cloves
Djion Mustard (smooth is best)
Olive Oil
Balsamic vinegar
Parma ham/ prosciutto
Now you’ll notice I gave no measurements above. Here’s why…
The combination of ingredients above seems very strange however work extremely well together. It all comes down to how much chicken you have an finally weather you prefer to have a strong balsamic flavour coming trhough (my other half loves this) or if you prefer a strong mustard flavour (I love this).
This means this is a great recipe for bring out your own creative cooking side.
SO HAVE FUN

To get you started I would recommend beginning your mix with 1 part Mustard to 3 parts vinegar I use just enough oil to create the right consistency for a marinade.
Taste and change ?
How to Make them:
Chop the garlic and rosemary finely and place into your mustard vinegar mixture.
Cut the chicken in thin strips (this allows then to cook quicker)
Once you happy with the flavour add your chicken and leave for at least 1 hour(in the fridge)
Take your rosemary sprigs and skewer your chicken.
Place your prosciutto on a flat surface and lay your skewed chicken on one side then wrap the chicken completely.
How to cook it?
Dry frying these in a pan seems to work the best, the chicken cooks very quickly so watch your temperature , you don’t want to burn the prosciutto.
You can cook them on a BBQ but I recommend turning them regularly so they don’t burn.

(note I ran out of sprigs so I simply used wooden skewers instead)
You’ll find this to be one of the juiciest treats in town. Get your friends over and start snacking.
I’ve always been a fan of what some might consider the world’s most frustrating toy.
I first solved the cube back in 1996 thanks to a gift from my Mom, thanks Mom.
Back then I would never have thought that one day I’d get the chance to sit down and chat with the Rubik’s cube World Record Holder.
That’s right this year I meet up with Australia’s Feliks Zemdegs who currently holds 15 cube records the most coveted being the Rubik’s 3×3 single with a time of 5.66 seconds.
